METHOD
Simmer oats with water until absorbed. Add milk, maple syrup, and salt; continue simmering 5–10 minutes until creamy.
Halve and pit apricots. Simmer sugar and water until dissolved, then add apricots and poach 5 minutes over low heat.
Spoon apricots over warm oatmeal and finish with pistachios and rose petals.
