Toast croissant in butter over medium heat, gently pressing until golden and crisp on both sides.
Bring water to a gentle simmer and add vinegar. Poach egg 3–4 minutes.
Smash avocado onto croissant. Toss greens with olive oil, lemon, salt, and pepper. Top with poached egg and serve immediately.
