I am a meat eater but I still enjoy this cookbook. For breakfast I made the bran muffins and the fruit salad made with figs, raspberries, apple and nectarines with a honey mint dressing. They were easy to make and it was a big hit! I paired the bran muffins with apricot jam and butter and brought some to my neighbors and they loved it too. I have an extensive cookbook collection and as I have read through this book I can tell the recipes are well written and would turn out well. I want to try the baked oatmeal next. As you can tell I like breakfast but not to worry, there are plenty of lunch, dinner and dessert recipes as well. All healthy but not too healthy if you know what I mean. :)

I bought this cookbook on an impulse at the counter. I couldn't be happier. I use it every week. The meals are easy to make and delicious. I've made quinoa cakes, zucchini curry soup with tofu 'croutons', cauliflower soup, and several others. I love that the author approaches cooking in a causal, easy manner allowing the cook to use fresh or canned vegetables depending on time and availability. The layout and design are lovely and the photographs beautiful. I'm back on Anthro to purchase it as a birthday gift for a fellow cook.

I've been working my way though this and have been pleasantly and consistently surprised by the delicious, simple, non-fussy recipes in this cookbook.
The recipes are simple, natural, and delicious!
